Product: Still Cider

Vintage: 2022

Apples: In 2022, Franconia went through some extreme heat waves and an intense drought. It did not rain for months. Our apples trees suffered, the fruit stems dried and the apples fell even before they started ripening. Fortunately for us, Felix, Christoph’s older brother, came to the rescue with a few tons of apples from his property located in Württemberg, where the season had been more forgiving. Felix’s apples are varieties perfectly suited for cider making. The resulting apple wine is a complex and interesting beverage. Less “thirst-quenching” then our 2021 version, more adapted to the table, where it’ll float along with many vegetable forward dishes. It will also pair really well with cheese.

Method: The apples were delivered in mid-October, and we crushed them with the old crusher from our neighbour (older than both of us combined!). The cider then fermented to dryness in stainless steel.

Aging: In stainless steel until bottling

Soil type: N/A

Sulfur: This cider had 10mg sulfur added at bottling.
