Vinification: Silvaner has a high pectin content, so we foot-stomped the grapes and macerated them overnight to start breaking down the pectin, and we pressed the next day.
Aging: In 500L barrels.
Bottled: 14th of August 2025
Soil type: We have four plots of Silvaner mixed in here. Some are in the flat vineyards planted on gipskeuper, some are on the hillside where the soil has a higher proportion of schilfsandstein (which is a different type of Keuper.)
Age of vines: The vines were planted between 1996 and 2003.
Sulfur: All of our wines had a microdose of sulfur pre-bottling, and analyses came back under 20mg total.
A note about the name: No regrets? Most of the time.
