Vinification: Whole bunches submerged in juice (so one part was pressed directly in order to submerge them) for the whole length of fermentation. Then pressed after two weeks.

Aging: Aged in a used 225L barrel. Only one barrel made.

Age of vines: Planted in 2005

Sulfur: 20mg at bottling
